cooI have been on a gluten free diet for over 30 years now because I have celiac disease. When I started on the diet, cakes and such were pretty much unheard of. Now Betty Crocker makes gluten free cake and cookie mixes. However, I don't like to use a lot of refined starches like white rice flour. We also live 20 miles from the grocery store, so I don't want to make a special trip for a cake mix. But I do like the occasional little sweet treat, as does my husband.
I came across this recipe from Dr. Ola on Pinterest and it was so easy, I thought I could adapt it to be gluten free. So I tinkered with it a little and my husband and I both really like the results. Plus, it has ingredients that are almost always in my kitchen.
Easy GF cake
1/2 c GF sweet sorghum flour
1/2 c GF cornstarch
1/2 tsp xantham gum
1/2 tsp baking powder
2 T butter, melted
2 T olive oil
1 can sweetened condensed coconut milk (14 oz)
Preheat oven to 350 degrees. Grease and flour an 8" square cake pan. Mix all dry ingredients first, then add the rest of the ingredients, beat a couple of minutes by hand or with a mixer and pour into the pan. Cook about 40 minutes. A toothpick should come out clean when inserted in the middle.
