We've been trying to change our eating habits-more extra virgin organic olive oil, lots more veggies, less high glycemic carbs, less fat free and avoiding artificial sweeteners and additives. Hard to do in this day and age unless you cook every single bite you eat. We decided to try butter with olive oil. We don't eat much butter, but we had seen butter mixed with canola or olive oil and thought it would be a healthier alternative than pure butter. Here is the recipe I came up with and it is pretty good. 1-stick (1/2 c.) unsalted butter, allowed to soften at room temperature 1/3 c. extra virgin olive oil Salt is optional Mix on medium to high speed with an electric mixer until well mixed and smooth. Pour into a small container with a lid and refrigerate. That's it! You can taste the olive oil a little, but we like that flavor. If you don't, you might want to do a little reading and try a different oil.
