I can remember when you couldn't buy gluten free pasta. I ate potatoes or rice as a substitute for pasta, and it was a poor substitute. Now the options are almost endless and I am enjoying it immensely. Even fresh pasta! Something I need to learn to make, for sure.
I was shopping recently in Albertsons and came across and end cap with a whole new selection of certified gluten free pastas from Barilla. At least all new to me. I chose one made of chickpea and a rotini made from red lentil. The ingredients list shows only red lentil and nothing else. How do they do that?
I am a big believer is using little indulgences for self-care. I think it's important to do something nice for yourself every day, just to promote that sense of well-being and comfort. In winter, one aspect of that is staying warm. My husband and I each have our personal blankets and snuggies that we curl up in to read or watch TV or just to sip on tea and listen to music. I think this is in line with the Danish principle of hygge and it makes perfect sense to me. Especially at home. Home should always be about comfort and peace; an escape from the rest of the world that whirls by crazily. This free pattern is perfect for that.
I read once that life is what happens while you are making other plans. For some reason, life has kept us in this small New Mexico town despite our best efforts to leave. We decided to scale way down for retirement and move closer to our kids on the west coast, but that has proven more difficult than we expected.
