I have been on a gluten free diet for over 30 years now because I have celiac disease. When I started on the diet, cakes and such were pretty much unheard of. Now Betty Crocker makes gluten free cake and cookie mixes. However, I don't like to use a lot of refined starches like white rice flour. We also live 20 miles from the grocery store, so I don't want to make a special trip for a cake mix. But I do like the occasional little sweet treat, as does my husband.
I came across this recipe from Dr. Ola on Pinterest and it was so easy, I thought I could adapt it to be gluten free. So I tinkered with it a little and my husband and I both really like the results. Plus, it has ingredients that are almost always in my kitchen. Easy GF cake 1/2 c GF sweet sorghum flour 1/2 c GF cornstarch 1/2 tsp xantham gum 1/2 tsp baking powder 2 T butter, melted 2 T olive oil 1 can sweetened condensed coconut milk (14 oz) 4 eggs Preheat oven to 350 degrees. Grease and flour an 8" square cake pan. Mix all dry ingredients first, then add the rest of the ingredients, beat a couple of minutes by hand or with a mixer and pour into the pan. Cook about 40 minutes. A toothpick should come out clean when inserted in the middle.
